Malai Kofta (without fry) healthy twist


Today I made Malai Kofta. Koftas which are not fried and going to melt in your mouth, just like the ones we eat at restaurants. It's made with just 2 teaspoons of cream. The best thing is that the children were also happy to eat it.





Ingredients


For kofta


  • Yam (Jimikand) - 150 grams
  • Cottage cheese - 125 grams
  • Chat masala - 1/4 teaspoon
  • Black pepper powder - 1/4 teaspoon
  • Salt to taste
  • Oats Powder- 1 Tablespoon
  • Green Coriander (Chopped) - 1 Tablespoon


For filling


  • Raisin (chopped) - 20
  • Cashew nuts (chopped) - 20
  • Green Coriander - 1 Tablespoon
  • Chat masala 1/4 Teaspoon


For gravy


  • Onion-1
  • Tomato-4
  • Garlic cloves - 7-8
  • Ginger - 1 "
  • Bay leaf- 1
  • Cinnamon - 1 "
  • Cumin seeds - 1/2 teaspoon
  • Yellow Pepper Powder - 1/2 Teaspoon
  • Salt to taste
  • Coriander Powder - 1 Teaspoon
  • Turmeric powder - 1/4 Teaspoon
  • Chat masala - 1/4 teaspoon
  • Dry fenugreek leaves (Kasoori methi)1/2 teaspoon 
  • Cashew nut - 2 tablespoon
  • Hung curd - 2 teaspoons
  • Cream - 2 teaspoons
  • Oil - 3 teaspoons
  • Sugar-1 teaspoon


How to make


For Kofta


 Wash the yam well and peel it.

Put a glass of water and yam to the cooker and give it a whistle.
When steam leaves, take the yams out of the cooker and let it cool.

Now add all of the Kofta ingredients in a bowl and mix it, now divide this mixture into 14 equal parts.





For filling


Cut the Raisins in two parts.
Cut the Cashew nuts into small pieces.
Finely chop the green coriander. Now mix the chat masala.


keep the mixture on your palms. Press it slightly.


Fill this stuffing inside the Kofta,



carefully make ball sized kofta.


In this way, you can make all the koftas.

Now add oats, salt, and red chili powder on a plate and Roll out the koftas one by one in it.




Apply oil to the appe pan. Put the koftas in it



and cook on medium flame till light brown at the base flip carefully and cook the other side to golden.




For  Gravy

Roughly Cut the onion, tomatoes
Peel the garlic, ginger, and keep it aside.
Heat oil in a vessel; Now add cumin seeds, cinnamon, and Bay leaf, then fry it.



 add onions, tomatoes, garlic, and ginger.

Now add salt, yellow chili powder, coriander powder, turmeric powder and cashew nuts in it.


cover with lid until spice to tender well.
Now add the chat masala and mix.



Turn off the gas.

After a while grind it into the mixer. Then filter it by adding it to the strainer.



 Now heat 1 teaspoon of oil in the same vessel and add the gravy and boil.



Now add 1 cup water and mix well when it comes to boil, add sugar to the gravy.

Finally, add hung curd and cream to a separate bowl and mix well.
Put the dry fenugreek leaves (Kasoori methi)  to the gravy.
Now mix in gravy.

The gravy is ready.


To serve


When you are serving food, put the Kofta in the Kofta gravy.
Enjoy Roti/rice with Malai koftas.
The Malai Koftas without frying also look very tasty.
