SAMA AND SAGO IDLI WITH COCONUT CHUTNEY (Special for vrat )
This is delicious, soft and spongy idli recipe which is made with Moraiyo rice /Sama rice / Samak rice /barnyard Millet /and sago.
Soaking time - 9 hours
Preparation time -10 minutes
Cooking time - 45 minutes
Makes - 4 servings
Ingredients
For idli
- Moraiyo rice /Sama rice / Samak rice / barnyard Millet -1 cup
- Sabudana 1/2 cup
- Salt to taste
- Baking soda - 1/4 teaspoon (optional)
- Buttermilk - 1 1/4 cup
For tempering the idli
- Fresh coconut -1/4 cup
- Green chilies - 3
- Ginger - 1"
- Clarified butter - 2 teaspoon
- Peanut oil - 1 teaspoon
For curd
- Curd/ yogurt - 2 cup
- Salt to taste
How to make
For idli
Clean and wash the sago(sabudana) and sama rice.
Drain and put in a mixer then add some buttermilk in it and make a batter.
the consistency of the batter will be granular. keep aside to soak for 9 hours.
In summer keep this batter in refrigerator.
again, grind the batter in the mixer to smoothen it.
For tempering the idli
Green chilies, ginger and coconut grind in the mixer.
Put clarified butter in a pan.when ghee becomes hot.add 2 teaspoons ginger, green chilies and coconut paste in it.
Saute for 2 minutes add in the idli batter.
Now add salt and baking soda then mix it well.
Put idli batter in greased idli molds.
Steam in an idli maker for 25 to 30 minutes. / oven in an idli maker for 7 minutes.
Ater this time check with the help of spoon.if it comes out clean then it's ready to eat.
For curd
Take a pan. put the oil in it. keep it on the low Flame.when oil becomes hot add remaining coconut, ginger and green chilies paste mix it for 2 minutes,
now add in curd and stir.
coconut flavor curd is ready to eat
