Rajasthani Garlic Chutney
A True Rajasthani plate is incomplete without Garlic Chutney. This Chutney, made from very few ingredients, is really tasty. , we can eat it with Bajra roti, maize Roti, paranthas, moong dal Pakoda, etc ..we can store it in the refrigerator for 15 to 20 days.

Total time - 23 minutes
Serves - 1 cup
Ingredients
- 4 - Garlic pods
- 10-12 Fresh Red Chilies
- 1/2 teaspoon Salt (according to taste)
- 3 tablespoons oil (I have used mustard oil)
- 1 tablespoon Coriander seeds
- 2 teaspoon Kashmiri Red Chili Powder
- 2 "Fresh turmeric
How to make garlic chutney:
Take a mixer jar, put chili, coriander, turmeric, garlic and some water then grind it.

When the oil becomes hot, turn off the gas and put garlic paste in the pan and mix well.
turn on the gas and heat it on low flame for 10 to 12 minutes.
Take 2 tablespoons of water, salt and Kashmiri red chili powder in a bowl and make its paste.

Remove the lid, stir well and let it cook on low flame until the raw smell is gone. you will see the oil floating over the chutney.

You can store this chutney for 15 days in the fridge.
Note : -
- If you can not get fresh chilies for garlic chutney then you can also use dried red chilies. Use dry red chilies soaked in hot water for half an hour then use them.
- If you want to carry garlic chutney while traveling then increase the amount of oil and do not pour water at all. You can use this Chutney for 5 to 7 days.
