This is sour and sweet chutney which is made from tamarind, jaggery, cumin powder, dry ginger powder etc. this is also known as Meethi chutney or saunth chutney. It is an essential part of the chaat.
Ingredients
- 200 gms - Tamarind
- 1/4 teaspoon - Rock salt
- 1 teaspoon - Black salt
- 2 teaspoons - Red chilli powder
- 1 teaspoon- Roasted cumin seeds
- 1/4 teaspoon - Dry Ginger powder
- 1 teaspoon - Cumin seeds
- 1/4 tsp - Asafoetida
- 1 tsp - Musk melon seeds
- 100 gm - Jaggery
- 3 Tbsp - Sugar (can taste more or less)
- 1 teaspoon- Oil
How to make Tamarind Chutney
Soak tamarind in the water for 4 to 5 hours or boil tamarind in 2 cups of water for 15 minutes on low flame.
keep it aside.
When it cools mash the tamarind in water with the help of your hand and strain with the colander.
Tamarind water is ready.
Now put another pan on medium flame, add oil to it.
When oil becomes hot add cumin seeds.
When cumin seeds are light brown in color, add asafoetida immediately to the water of tamarind.
Now let it boil and then reduce the flame of the gas.
Now add red chilli powder, roasted cumin powder, rock salt, black salt, jaggery, and sugar.
When the chutney starts to thicken. now add dry ginger powder.
(Keep in mind that chutney will get thick after cooling.)
When the chutney is fully formed, put melon seeds in it and close the gas.
Now put it in an airtight box and keep it in the refrigerator for 15 to 20 days. Use when needed.
