Pumpkin Jaggery Kheer
Ingredients
Pumpkin (grated) 3/4 Cup
Ghee 1 tsp
Fennel seeds ( Coarse Powder) 1/2 Tsp
Cardamom Powder 1/2 Tsp
Jaggery 1/4 Cup
Almonds (chopped) 1 Tbsp
Coconut (grated) 1 Tbsp
Sabudana (Sago) 1 Tbsp
Milk 1 1/2 liters
How To Make
Soak the sago for 4 to 5 hours.
Now put milk in a heavy bottom vessel
and reduce the flame when it comes to boil, now add soaked sago and cook till the milk thickens.
Now add ghee in another vessel then add Fennel Powder.
Now add Almonds and fry.
Now add Grated Pumpkin and Jaggery
and cook till it becomes light brown.
Then we will mix it in Milk.
Cook until it comes to a boil.
Add Cardamom Powder and stir.
Garnished with Pistachios and Rose leaves.
