Besan Bhakarwadi
Bhakarwadi is a traditional Gujarati, Maharashtrian breakfast. It is a deep-fried, pinwheel-shaped snack made of Gram Flour (Besan) and Whole Wheat Flour. It is filled with Sesame, Coconut, Peanuts, Garlic, Chilli etc.
Total Time - 45 Minutes
Quantity - 40 pieces
INGREDIENTS
Bhakarwadi Dough
Wheat flour - 1 cup
Besan 1 cup
Salt 1 tsp
Oil 3 tbsp
Turmeric Powder 1/4 tsp
Red chili powder 1/4 tsp
Poppy Seeds 2 tsp
Stuffing Ingredients
Oil - 2 tbsp
Green chili (crushed) 2 tbsp
Garlic (crushed) 2 tbsp
Fresh Coriander 3 tbsp
White Sesame 3 tbsp
Peanuts 1/4 cup
Coconut (grated) 3 tbsp
Lemon juice 2 tbsp
Salt 1 tsp (According to taste)
Red chili powder 1 1/2 tsp
Turmeric Powder 1/2 tsp
Jaggery powder 2 tbsp
Spicy Sev 1/2 cup
For Garnish
Poppy seeds 2 tsp
How To Make
In a large bowl add wheat flour, gram flour, salt, turmeric powder and mix.
Now add lukewarm oil to the flour and mix it.
Make a fist by taking the dough in hand.
If fist is being made then it means that Moyan is in sufficient quantity. (otherwise add one more spoon of oil)
Now knead the dough a little hard with water.
Now cover this dough with a wet muslin cloth and keep it aside.
How to make Stuffing
Put oil in a pan. When the oil is hot, add green chillies, garlic and fry on low flame.
When aroma starts, add white Sesame seeds, then add Peanuts, Coconut powder, Turmeric powder, Chili powder, Salt,Jjaggery powder, Green coriander and lemon juice all the ingredients one by one.
Mix them well. Turn off the gas. Keep the mixture aside to cool down.
Add Sev to the mixture and mix well.
To make Bhakarwadi

Now divide the dough into three portions.
Spread the poppy seeds on the rolling area. Make a dough on it and roll it round with the help of rolling pin. The roti should not be too thin.
Lightly apply water to the roti
Then spread the stuffing.
Now apply water on the edges.
Now make a roll of roti
Now roll it with light hand and make long roll.
divide this roll into small pieces with the help of a knife.

Meanwhile, keep the oil on high flame.
Now place the cut piece in your palm and press it.
Now fry it on medium heat.
Fry the Bhakarwadi till it turns golden brown.
Fry till them turns golden brown.
Similarly prepare all the bhakarwadi.
Spicy and Crispy Bhakarwadi is ready to be served.
Note:-
1. If you don't eat garlic, don't use it.
2. You can increase or decrease the amount of chili according to your taste.
3. I have used Bikaneri Namkeen as a sev. Use whatever spicy and salty Sev you like.
